Coconut patty recipe

Like every other Sunday morning, I woke up early to drink coffee and help make breakfast with my mom. Okay, so I don’t really help her. I just contribute either primal pancakes or coconut patties. Lately, I’ve been loving the coconut patties, so I decided to make those. I got the idea from Son of Grok. He calls them coconut griddle cakes, and my mom calls them coconut puffs. I’ll stick with patty. :D They are really easy to make, and I add organic vanilla extract and cinnamon to mine. DELICIOUS!

For dinner, my whole family (minus Roberto, Morgan, and Bobby: WE MISS YOU!) met at Danny’s Restaurant. I love when we are all able to get together. We laugh…a lot!

Trying to be primal at a restaurant is not as hard as you may think. Two of us chose Danny’s Corral Plate which includes fajita, chicken fajita, sausage covered in cheese, rice, beans, and guacamole. We asked the waitress to leave out the cheese and replace the rice and beans with vegetables. The first time she brought the food out, our meat was covered in melted cheese. As hungry as we were, we kindly told her that we had wanted the meal without cheese. The second time the food was brought out, it was perfect. Quite an enjoyable meal with very good company.
