Make your own!!

Thirty degree weather actually made a stop in Laredo today. It was sooo cold! I think my coach has a radar for bad weather because each time he has programmed a running workout, it’s either raining, unbearably cold, or both! Once again, I braved the cold and completed my running workout. Thank you, coach!! :D

As for the rest of my day, I was pretty productive. Here in the Garza household, we love iced coffee (especially from Starbucks). Buying a grande iced coffee from Starbucks on a regular basis can get pretty expensive, so we tried making our own today. It’s really easy. Just brew some coffee in a coffeemaker using more coffee than usual (to make the coffee stronger). Due to the addition of ice, the flavor tends to dilute a little. Once it’s done, turn off the coffeemaker, and let the coffee cool for a while. Then pour the coffee into a pitcher, and refrigerate it until it’s cold. Finally, place some ice in a cup, pour the coffee in, and you have iced coffee! I prefer using bagged ice from a convenience store/HEB because it doesn’t melt as fast as ice from a freezer.

Sadly, my last Mauna Loa macadamia nut was consumed today. The 24 oz. canister can be found at any Costco store; however, Laredo does not have a Costco! These macadamia nuts have sea salt and no added oils. And they taste like Cheetos! No joke. Therefore, some more canisters of Mauna Loa macadamia nuts have been ordered from Amazon.com and will be arriving soon.

In the meantime, I refilled the empty canister with a homemade trail mix consisting of raw macadamia nuts, cashews, walnuts, pecans, unsweetened coconut, dried blueberries, and dried cherries. Sometimes you can find great deals on nuts in the baking section of a supermarket. I got an 8 oz. package of walnuts for $1.89. I know!! A total steal!! The dried fruit I purchase consists of just the fruit (no added sugar or oils). They can be found at HEB Plus. Most brands of dried fruit have a bunch of sugar and unhealthy oils added to them. Be very careful, and make sure to read the labels when purchasing dried fruit.

    Mauna Loa macadamia are the best ones I’ve tried. I’m lucky enough to find them at a few local stores here in FL. I recently decided to start growing some of my own food in my yard and one of the things I purchased was an Arkin Papershell Macadamia nut tree. Hopefully they’ll taste as good as Mauna Loa. We’ll see in 4 or 5 years when the tree finally starts producing.
